Sierra’s Vegetarian Mediterranean Pizza

It’s been a while since I’ve made a pizza. Yesterday I got together with a friend and we made the most delicious pizza that was better than take out. The pizza does not have any red sauce; we used basil pesto for the base and for the toppings there are sauteed cremini  mushrooms, baby spinach, and yellow onions. For the cheese, we used feta and an Italian cheese blend and roasted vine-ripe tomatoes on top to add a splash of red. The crust is homemade – it’s light and airy with a nice crunch at every bite. This pizza was so good I want to share the recipe.

Making the Dough

Ingredients:

1 cup warm water (120-130 degrees )

1 packet fast-rising instant yeast

1 tbsp olive oil or canola oil

1/2 tsp salt

3 Tbsps cornmeal for pan

3 cups flour

Directions:

In large bowl, pour in the flour, yeast and salt. Whisk to combine all ingredients.

Now add in the water and mix until dough comes together . Make sure not to over mix.

Knead the dough for a minute or 2, then form ball.

With 2 tbsps of oil, oil a medium bowl. Put dough in oiled bowl. Now cover with plastic wrap and set in a warm, draft-free place for 90 minutes or until dough has doubled. (I put the dough in an unplugged microwave).

Making The Pesto…

Ingredients

1 cup basil

4 tbsps olive oil

3 garlic cloves

parmesan cheese (ungrated)

1/3 cup pecans

1/2 tsp salt

1/2 tsp pepper

Directions:

In a food processor or blender, combine pecans, basil, garlic and parmesan cheese. Pulse until finely chopped.

Add the olive oil, salt and pepper. Process a little more. You can add more basil. Now set pesto aside in a bowl.

Roasted Tomatoes…

Ingredients…

2 tomatoes (sliced)

2 tsps olive oil

1 tsp Italian seasoning

1/2 tsp dill

1/2 tsp black pepper

Directions…

Thinly slice tomatoes and  place in small bowl. Add olive oil.

Add Italian seasoning, dill, and black pepper and stir. Place tomatoes on lined pan. Put in a preheated oven set at 375 degrees for 1hr.


Ingredients for Spinach, Mushroom, and Onions..

6 medium cremini mushrooms

Half of an onion

2 handfuls of spinach

1 tbsp olive oil

Directions:

Heat the olive oil in a skillet at medium-high. Place thinly-sliced mushrooms and onions in skillet and stir. Cover the pan for 7 mins and then add the spinach. Stir spinach and onions, mushrooms for 3 mins or until cooked down.

Making The Pizza…

After the dough has doubled punch down and turn out onto a floured board or counter.Knead a little and let rest in oiled  bowl for 5 mins.

Add 2tsp olive to a 12×2 inch baking or pizza pan, coating the bottom and sides with oil. Sprinkle 2 tbsps of cornmeal on the bottom of the pan until covered. Lightly press out the dough until it reaches the sides.

Adding The Topping…Finally

After the dough has been placed in the pan, take a fork and put holes all over to prevent bubbling. Take a 1/2 tbsp of olive oil and use your fingers or a pastry brush to rub oil all over the dough. Now add the pesto and then the roasted tomatoes, feta cheese, and mushrooms. Add the Italian cheese blend. Put pizza in a 500 degree oven and bake for 10-15 minutes.

Finished Product:

Now you can slice this beautiful baby…Mangia, Mangia!!!
